Make this easy, creamy, no-bake grasshopper pie featuring a rich Oreo crust and a fluffy mint chocolate filling. This is a simple, refreshing dessert perfect for any gathering.

Ingredients

Scale
  • 1 1/2 cups chocolate cookie crumbs (about 25 Oreos, filling included)
  • 1/4 cup unsalted butter, melted
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/4 cup milk
  • 1/4 cup green crème de menthe syrup (non-alcoholic)
  • 1 container (8 ounces) frozen whipped topping (like Cool Whip), thawed
  • Green food coloring (optional, for deeper color)
  • 1/2 cup semi-sweet chocolate chips, melted for drizzling

Instructions

  1. Prepare the crust: Combine the chocolate cookie crumbs and melted butter in a medium bowl. Press the mixture firmly and evenly into the bottom and up the sides of a 9-inch pie plate. Place the crust in the freezer while you prepare the filling.
  2. Make the filling base: In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the powdered sugar until fully combined.
  3. Add flavorings: Mix in the vanilla extract, peppermint extract, milk, and green crème de menthe syrup. If you want a more intense green color, add a few drops of green food coloring now. Beat until smooth.
  4. Fold in whipped topping: Gently fold the thawed whipped topping into the cream cheese mixture until no white streaks remain and the filling is uniform and fluffy. Do not overmix.
  5. Assemble the pie: Pour the mint filling into the chilled Oreo crust, spreading it evenly with a spatula.
  6. Chill: Cover the pie loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until the filling is firm.
  7. Garnish and serve: Before serving, drizzle the melted semi-sweet chocolate chips over the top of the pie. Slice and serve cold.

Notes

  • For a richer chocolate flavor in the crust, use chocolate wafer cookies instead of Oreos.
  • If you prefer a slightly firmer, frozen pie, you can freeze this dessert for up to 4 hours before serving.
  • You can substitute the green crème de menthe syrup with 1/4 cup of heavy cream mixed with 1 teaspoon of peppermint extract and green food coloring, if avoiding syrup.
