Make a wonderfully moist and tender banana bread loaf using your overripe bananas. This simple recipe requires one bowl and delivers classic comfort flavor.

Ingredients

Scale
  • 3 large very ripe bananas, mashed
  • 1/3 cup melted unsalted butter
  • 3/4 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • Optional: 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Add the sugar, egg, and vanilla extract. Mix until just combined.
  5. In a separate small bowl, whisk together the baking soda and salt with the flour.
  6. Add the dry ingredients to the wet ingredients. Mix with a spatula until just combined. Do not overmix.
  7. If using, fold in the chocolate chips.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • For the moistest bread, use bananas that are heavily spotted or almost black.
  • If your oven tends to brown the top too quickly, loosely tent the loaf with aluminum foil halfway through baking.
  • To check for doneness without a toothpick, gently press the top center; it should spring back slightly.
