Ingredients
Scale
1 leftover turkey carcass or 4 cups turkey bones
8 cups water
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1 bay leaf
1 cup cooked leftover turkey, shredded
1/2 cup rice or egg noodles (optional)
1 tablespoon olive oil
Salt and black pepper to taste
Instructions
Place the turkey carcass or bones, water, onion, carrots, celery, thyme, and bay leaf in a large pot.
Bring the mixture to a boil, then reduce heat and simmer, partially covered, for 1 to 1.5 hours to make the broth. Skim off any foam that rises to the top.
Remove the carcass and strain the broth through a fine-mesh sieve into a clean pot. Discard solids.
In the strained broth, add the olive oil and minced garlic. Simmer for 5 minutes.
Add the shredded cooked turkey. If using, add the rice or noodles now.
Cook until the rice or noodles are tender, about 10 to 15 minutes, depending on the type used.
Remove the bay leaf. Season the soup with salt and pepper to your preference.
Notes
For a creamier soup, stir in 1/2 cup of evaporated milk or heavy cream during the last 5 minutes of cooking.
If you do not have a carcass, use 6 cups of store-bought low-sodium chicken or turkey broth and skip steps 1 and 2.
Add other leftover cooked vegetables like peas or green beans in the last 10 minutes.
