Ingredients
Scale
2 cups cooked and mashed sweet potatoes (about 3 medium)
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1/2 cup unsalted butter, melted
2 large eggs, separated
1/2 cup whole milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup chopped pecans
2 tablespoons all-purpose flour
2 tablespoons granulated sugar (for topping)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 1.5-quart baking dish.
In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, melted butter, egg yolks, milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
In a separate clean bowl, beat the egg whites with an electric mixer until stiff peaks form.
Gently fold one-third of the beaten egg whites into the sweet potato mixture to lighten it. Then, gently fold in the remaining egg whites until just combined. Do not overmix.
Pour the mixture into the prepared baking dish.
In a small bowl, combine the chopped pecans, flour, and 2 tablespoons of sugar for the topping. Sprinkle this mixture evenly over the top of the souffle batter.
Bake for 30 to 35 minutes, or until the souffle is puffed and the topping is golden brown.
Serve immediately while warm and fluffy.
Notes
For a Southern style variation, you can add 1/4 cup of heavy cream to the batter for extra richness.
If you prefer a gluten-free version, substitute the all-purpose flour in the topping with almond flour.
To make this dairy-free, replace the butter with an equal amount of melted coconut oil and use a non-dairy milk like oat or almond milk.
