Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey or beef
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can corn, drained
  • 1 medium zucchini, chopped
  • 1 cup chicken or vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Add ground turkey or beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  4. Stir in diced tomatoes, kidney beans, corn, zucchini, chicken or vegetable broth, chili powder, cumin, salt, and pepper.
  5. Bring to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or until vegetables are tender and flavors have melded.
  6. Serve hot and enjoy!

Notes

  • For a spicier chili, add a pinch of cayenne pepper or a chopped jalapeƱo with the onions.
  • Feel free to add other vegetables like bell peppers or carrots.
  • Top with your favorite chili toppings such as shredded cheese, sour cream, or chopped cilantro.
