Make decadent cream cheese stuffed French toast featuring fresh strawberries. This recipe is perfect for a special weekend brunch.

Ingredients

Scale
  • 8 slices thick-cut brioche bread
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup milk
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons butter, for cooking
  • 1 cup fresh strawberries, sliced
  • Powdered sugar, for dusting

Instructions

  1. In a small bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth.
  2. Spread the cream cheese mixture evenly on one side of four slices of brioche bread. Top each with one slice of plain brioche, creating four sandwiches. Gently press the edges to seal.
  3. In a shallow dish, whisk together the egg, milk, and cinnamon.
  4. Dip each stuffed sandwich into the egg mixture, coating both sides quickly. Do not let the bread soak too long.
  5. Melt butter in a large skillet over medium heat. Cook the stuffed French toast for 3 to 4 minutes per side, until golden brown and heated through.
  6. Slice the cooked French toast in half diagonally.
  7. Serve immediately topped with fresh sliced strawberries and a dusting of powdered sugar.

Notes

  • Use thick bread like brioche or challah for the best structure.
  • For a make-ahead option, assemble the sandwiches and refrigerate them for up to 4 hours before cooking.
  • You can substitute blueberries for strawberries if desired.
