Ingredients
Scale
1 cup warm milk (about 110°F)
2 1/4 teaspoons active dry yeast
1/4 cup granulated sugar, divided
1 large egg, room temperature
1/4 cup unsalted butter, melted
1 teaspoon salt
3 1/4 cups all-purpose flour, plus more for dusting
1/2 cup (1 stick) unsalted butter, softened, for brushing
1 teaspoon honey (optional, for Texas Roadhouse style finish)
Instructions
In a large bowl, combine the warm milk, yeast, and 1 tablespoon of the sugar. Let this mixture sit for 5 to 10 minutes until it becomes foamy. This shows your yeast is active.
Add the remaining sugar, the egg, melted butter, and salt to the yeast mixture. Whisk them together until combined.
Gradually add the flour, mixing first with a spoon and then switching to kneading by hand or with a dough hook on low speed. Knead for about 5 to 7 minutes until you have a smooth, elastic dough that is slightly tacky but does not stick to your hands.
Place the dough in a lightly oiled bowl, turning it once to coat. Cover the bowl with plastic wrap or a clean kitchen towel. Let the dough rise in a warm place for 1 to 1.5 hours, or until it has doubled in size. This is key for fluffy homemade bread.
Gently punch down the risen dough. Divide the dough into 12 equal pieces. Roll each piece into a tight ball.
Arrange the dough balls in a greased 9×13 inch baking pan, leaving a small space between them. Cover the pan loosely and let the rolls rise again for 30 to 45 minutes, or until they are puffy.
Preheat your oven to 375°F (190°C). Bake the rolls for 15 to 18 minutes, or until they are golden brown on top.
While the rolls are still hot, melt the 1/2 cup of butter. Brush the tops generously with the melted butter for that classic buttery flavor.
For Texas Roadhouse Style Rolls copycat finish: Mix the melted butter with 1 teaspoon of honey and a pinch of salt. Brush this mixture over the hot rolls immediately after baking.
Serve your soft dinner rolls warm.
Notes
For make ahead dinner rolls, you can refrigerate the shaped rolls (after the second rise) for up to 24 hours. Add 5 to 10 minutes to the baking time if baking directly from the refrigerator.
If you want quick dinner rolls, ensure your milk temperature is correct; too hot will kill the yeast, too cold will slow the rise.
These rolls are excellent for holiday side dish baking or as a weeknight bread recipe.
