Make quick and easy shrimp fajitas using a single sheet pan for minimal cleanup. This recipe features tender shrimp and charred vegetables coated in a bright, zesty lime and cilantro seasoning, perfect for weeknight dinners.

Ingredients

Scale
  • 1.5 lbs large shrimp, peeled and deveined
  • 2 large bell peppers (one red, one yellow), sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 2 limes
  • 2 tablespoons fresh cilantro, chopped
  • 8 small flour or corn tortillas (optional)
  • Toppings: sour cream, salsa, avocado slices (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the sliced peppers and onion. Drizzle with 1 tablespoon of olive oil and toss to coat. Spread the vegetables in a single layer on the prepared baking sheet.
  3. In the same bowl, place the shrimp. Add the remaining 1 tablespoon of olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Toss until the shrimp is evenly coated.
  4. Arrange the seasoned shrimp among the vegetables on the baking sheet, ensuring everything is in a single layer.
  5. Bake for 10 to 12 minutes, or until the shrimp is pink and cooked through and the vegetables are tender-crisp.
  6. Remove the sheet pan from the oven. Immediately squeeze the fresh lime juice over the shrimp and vegetables. Sprinkle with chopped cilantro.
  7. Serve the sizzling shrimp and vegetables immediately with warm tortillas or over rice for fajita bowls.

Notes

  • For a Cajun variation, add 1/2 teaspoon of cayenne pepper to the seasoning mix.
  • If you prefer softer vegetables, toss them with the seasoning first and roast them for 5 minutes before adding the shrimp to the pan.
  • You can prepare the lime marinade mixture ahead of time and let the shrimp sit in it for up to 30 minutes before baking.
