Make a classic, creamy rice pudding on the stovetop using simple ingredients. This recipe features comforting vanilla and cinnamon flavors.

Ingredients

Scale
  • 1 cup short-grain white rice
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (plus extra for topping)

Instructions

  1. Combine the rice, milk, sugar, and salt in a medium saucepan.
  2. Place the saucepan over medium heat. Stir frequently until the mixture begins to simmer.
  3. Reduce the heat to low. Continue to cook, stirring often to prevent sticking, for 40 to 50 minutes, or until the rice is tender and the pudding has thickened to your desired consistency.
  4. Remove the saucepan from the heat. Stir in the vanilla extract.
  5. Let the pudding cool slightly. It will thicken more as it cools.
  6. Serve warm, sprinkled with extra ground cinnamon.

Notes

  • For a quicker version, you can substitute 1 cup of cooked leftover rice for the raw rice, reducing the cooking time significantly.
  • If you prefer raisins, stir in 1/2 cup of golden raisins during the last 10 minutes of cooking.
  • This pudding thickens considerably upon chilling. Add a splash of milk when reheating if you prefer a looser texture.
