Make fast, creamy avocado toast using a simple mashing technique. This recipe includes instructions for the classic version plus two popular topping variations: spicy red pepper flakes and a protein boost with a fried egg.

Ingredients

Scale
  • 2 slices whole grain bread
  • 1 ripe avocado
  • 1 teaspoon fresh lime or lemon juice
  • Pinch of sea salt
  • Pinch of black pepper
  • For Classic Topping: Pinch of flaky sea salt
  • For Spicy Topping: 1/4 teaspoon red pepper flakes
  • For Protein Boost: 1 large egg

Instructions

  1. Toast the bread slices until golden brown and crisp.
  2. While the bread toasts, cut the avocado in half and remove the pit. Scoop the flesh into a small bowl.
  3. Add the lime juice, salt, and pepper to the avocado.
  4. Use a fork to mash the avocado until it reaches your desired creamy consistency. For a very creamy mash, press firmly against the side of the bowl.
  5. Spread the mashed avocado evenly over the two slices of toast.
  6. For the Classic Topping: Sprinkle with flaky sea salt.
  7. For the Spicy Topping: Sprinkle with red pepper flakes.
  8. For the Protein Boost: While the toast is being assembled, quickly fry or poach one egg. Place the cooked egg on top of one slice of avocado toast and season with salt and pepper.
  9. Serve immediately.

Notes

  • Choose an avocado that yields slightly to gentle pressure for the best creamy texture.
  • To make this a 10 minute breakfast, prepare the egg first while the bread is toasting.
  • For a gourmet touch, sprinkle toasted sesame seeds or everything bagel seasoning on top.
