Ingredients
Scale
1 loaf (1 lb) challah or brioche bread, cubed
4 large eggs
2 cups milk
1 cup pumpkin puree
1/2 cup maple syrup, plus more for serving
2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup chopped pecans (optional)
Powdered sugar for dusting (optional)
Instructions
Arrange bread cubes in a greased 9×13 inch baking dish.
In a large bowl, whisk together eggs, milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and salt until well combined.
Pour the egg mixture evenly over the bread cubes, ensuring all pieces are coated. Gently press down to help them soak up the liquid.
If using, sprinkle chopped pecans over the top.
Cover the dish and refrigerate for at least 4 hours, or preferably overnight.
Preheat your oven to 350°F (175°C).
Bake uncovered for 45-55 minutes, or until the casserole is puffed up, golden brown, and set in the center.
Let it rest for a few minutes before serving.
Serve warm with extra maple syrup and a dusting of powdered sugar, if desired.
Notes
For a richer flavor, use half-and-half or heavy cream instead of milk.
Adjust the amount of pumpkin pie spice to your preference.
You can make this casserole a day ahead, making it perfect for holiday mornings or weekend brunches.
