Ingredients
Scale
1 (17.3 ounce) package frozen puff pastry, thawed
1 cup pumpkin puree
4 ounces cream cheese, softened
1/4 cup granulated sugar
1 egg yolk
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Powdered sugar, for dusting
Milk, for glaze
Instructions
Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
In a medium bowl, beat together the softened cream cheese and granulated sugar until smooth.
Beat in the pumpkin puree, egg yolk, pumpkin pie spice, vanilla extract, and salt until well combined.
Unfold the thawed puff pastry sheets onto a lightly floured surface. Cut each sheet into four equal squares.
Spoon about 2 tablespoons of the pumpkin cream cheese filling onto the center of each puff pastry square.
Fold two opposite corners of the pastry towards the center, overlapping them slightly in the middle to create a simple Danish shape. Gently press to seal.
Place the Danishes onto the prepared baking sheets, leaving some space between them.
Bake for 15-20 minutes, or until the pastries are golden brown and puffed up.
While the Danishes are baking, prepare the glaze by whisking together powdered sugar with a tablespoon or two of milk until you reach your desired drizzling consistency.
Remove the Danishes from the oven and let them cool on the baking sheets for a few minutes before transferring them to a wire rack.
Drizzle the glaze over the warm Danishes.
Notes
Ensure your puff pastry is fully thawed but still cold for the best results.
Adjust the amount of milk in the glaze to achieve your preferred thickness.
These Danishes are best enjoyed fresh, but leftovers can be stored in an airtight container at room temperature for a day or two.
