  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 cup beer (lager or ale recommended)
  • 8 ounces shredded cheddar cheese
  • 4 ounces shredded Monterey Jack cheese
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  7. Whisk in the flour and cook for 1 minute, stirring constantly.
  8. Gradually whisk in the milk and beer until smooth.
  9. Bring the mixture to a simmer, stirring occasionally, until it thickens.
  10. Reduce the heat to low and stir in the cheddar cheese and Monterey Jack cheese until melted and smooth.
  11. Add garlic powder and cayenne pepper (if using). Season with salt and black pepper to taste.
  12. Serve the warm pretzel bites immediately with the beer cheese dip.

Notes

  • You can use any type of shredded cheese you prefer for the dip.
  • For a spicier dip, add more cayenne pepper or a dash of hot sauce.
  • If you don’t want to use beer, you can substitute with more milk or chicken broth.
