Make crunchy, tangy pickled carrots easily using this refrigerator method. This recipe offers a base brine you can customize for a mild dill flavor or a spicy Mexican style.

Ingredients

Scale
  • 1 pound carrots, peeled and cut into spears or coins
  • 1 cup white vinegar (5% acidity)
  • 1 cup water
  • 2 tablespoons granulated sugar
  • 1 tablespoon kosher salt
  • For Dill Flavor: 2 cloves garlic, smashed; 1 teaspoon dill seed
  • For Spicy Mexican Flavor: 1 small jalapeño, thinly sliced; 1 teaspoon whole black peppercorns; 1/2 teaspoon dried oregano

Instructions

  1. Prepare the carrots: Cut the carrots into uniform spears or coins. Place them into a clean, pint-sized glass jar or container.
  2. Make the brine: In a small saucepan, combine the vinegar, water, sugar, and salt. Heat over medium heat, stirring until the sugar and salt completely dissolve. Do not boil.
  3. Add flavorings: If making the Dill version, add the smashed garlic and dill seed directly to the jar with the carrots. If making the Spicy Mexican version, add the sliced jalapeño, peppercorns, and oregano to the jar.
  4. Pour the brine: Carefully pour the hot brine over the carrots in the jar, ensuring the carrots are fully submerged. Leave about 1/2 inch of headspace at the top.
  5. Cool and refrigerate: Let the jar cool on the counter for about 30 minutes. Once cool, seal the jar tightly and transfer it to the refrigerator.
  6. Wait to eat: The carrots will be ready to eat in about 24 hours, but the flavor develops best after 2 to 3 days in the refrigerator.

Notes

  • For extra crunch, you can soak the cut carrots in ice water for 30 minutes before placing them in the jar.
  • These refrigerator pickles last for up to 3 weeks when stored in the fridge.
  • Adjust sugar and salt ratios slightly if you prefer a sweeter or saltier pickle.
