Make simple, edible chocolate chip cookie dough truffles without turning on your oven. These quick bites are perfect for parties or a fast dessert.

Ingredients

Scale
  • 1 cup heat-treated flour or oat flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1/2 cup melted semi-sweet chocolate for dipping (optional)

Instructions

  1. Combine the heat-treated flour, brown sugar, and granulated sugar in a medium bowl. Mix well.
  2. Add the softened butter, milk, vanilla extract, and salt to the dry ingredients. Mix with a hand mixer or spoon until a thick dough forms.
  3. Fold in the mini chocolate chips until they are evenly distributed throughout the dough.
  4. Cover the bowl and chill the dough in the refrigerator for at least 30 minutes to firm it up.
  5. Scoop the chilled dough using a small cookie scoop or spoon. Roll the dough into uniform balls, about 1 inch in diameter.
  6. If dipping, melt the semi-sweet chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  7. Dip each truffle halfway into the melted chocolate, or drizzle the chocolate over the tops.
  8. Place the finished truffles on a parchment-lined baking sheet.
  9. Refrigerate for at least 15 minutes, or until the chocolate coating is set.

Notes

  • To heat-treat flour, spread it on a baking sheet and bake at 350°F (175°C) for 5 minutes, then let it cool completely before using.
  • For a different finish, roll the truffles in cocoa powder or extra mini chocolate chips before chilling.
  • Store leftover truffles in an airtight container in the refrigerator for up to one week.
