Make these easy, creamy cheesecake bars without turning on your oven. They feature a graham cracker crust, a bright lemon filling, and a fresh strawberry topping.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 1 (8 ounce) package cream cheese, softened
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, combine the graham cracker crumbs and 1/4 cup sugar. Pour in the melted butter and mix until the crumbs are evenly moistened.
  3. Press the crumb mixture firmly and evenly into the bottom of the prepared pan. Place the crust in the freezer while you prepare the filling.
  4. In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
  5. Gradually beat in the sweetened condensed milk until fully combined and smooth.
  6. Stir in the lemon juice, lemon zest, and vanilla extract until the mixture thickens slightly.
  7. Pour the cheesecake filling over the chilled crust and spread it evenly.
  8. Arrange the sliced strawberries over the top of the filling. Gently press them down slightly.
  9. Cover the pan loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until the filling is firm.
  10. Use the parchment paper overhang to lift the bars from the pan. Cut into 16 squares before serving.

Notes

  • For the cleanest cuts, run your knife under hot water and wipe it dry between each slice.
  • If you prefer a slightly firmer crust, chill it for 15 minutes before adding the filling.
  • Use fresh lemon juice for the best flavor; bottled juice changes the texture.
