Make these high protein breakfast egg muffin cups in your muffin tin for a perfect freezer friendly breakfast. They stay fluffy when you use the water bath method.

Ingredients

Scale
  • 12 large eggs
  • 1/4 cup milk or heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked, crumbled bacon or diced ham
  • 1/2 cup chopped vegetables (spinach, bell peppers, onions)

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin or line it with silicone liners.
  2. In a large bowl, whisk the eggs, milk or cream, salt, and pepper until fully combined and slightly frothy. This helps create a fluffy interior.
  3. Stir in the shredded cheese, cooked meat, and chopped vegetables. Distribute the mixture evenly among the 12 muffin cups, filling each about three-quarters full.
  4. Prepare a water bath: Place the filled muffin tin inside a larger baking pan. Carefully pour hot water into the larger pan until it reaches about halfway up the sides of the muffin tin. This steam bath prevents the egg bites from becoming rubbery.
  5. Bake for 20 to 25 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
  6. Remove the muffin tin from the water bath and let the egg bites cool in the pan for 5 minutes before removing them.

Notes

  • For best results when freezing, let the egg bites cool completely before placing them in an airtight, freezer-safe bag or container. They keep well for up to one month.
  • To reheat from frozen, microwave one or two egg bites for 60 to 90 seconds, or until heated through.
  • If you prefer a crispier top and skip the water bath, increase the oven temperature to 350 degrees Fahrenheit, but watch closely as they may cook faster and become slightly less tender.
