Learn how to make authentic Mexican street corn, also known as Elote, with this easy-to-follow recipe. This vibrant dish features grilled corn on the cob, slathered with creamy mayonnaise, cotija cheese, chili powder, and lime.

Ingredients

Scale
  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup lime juice
  • 1 teaspoon chili powder
  • Optional toppings: more cilantro, cotija cheese, chili powder, lime wedges

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn for 8-10 minutes, turning occasionally, until lightly charred and tender.
  3. While the corn grills, mix together the mayonnaise, cilantro, cotija cheese, lime juice, and chili powder in a small bowl.
  4. Once the corn is cooked, carefully spread the mayonnaise mixture evenly over each ear of corn.
  5. Sprinkle with additional cotija cheese, cilantro, and chili powder if desired.
  6. Serve immediately with lime wedges.

Notes

  • You can also roast the corn in the oven if you don’t have a grill.
  • For a spicier kick, add a pinch of cayenne pepper to the mayonnaise mixture.
  • If cotija cheese is unavailable, feta cheese can be used as a substitute.
