Ingredients
Scale
10 small flour tortillas
1 tablespoon vegetable oil
1 pound ground beef
1 packet taco seasoning mix
1 cup water
1 (16 ounce) can refried beans, warmed
1 cup enchilada sauce
2 cups shredded Mexican cheese blend
1/2 cup sliced black olives (optional)
1/2 cup diced tomatoes (optional)
Instructions
Heat vegetable oil in a large skillet over medium heat. Fry tortillas in batches until golden brown and crisp, about 1 to 2 minutes per side. Drain on paper towels.
Brown the ground beef in the same skillet. Drain off excess fat.
Stir in taco seasoning and water according to package directions. Simmer until the sauce thickens slightly, about 5 minutes.
To assemble the first layer, place one crispy tortilla on a baking sheet. Spread half of the warmed refried beans evenly over the tortilla.
Top the beans with half of the seasoned ground beef mixture.
Spoon half of the enchilada sauce over the beef layer.
Place a second crispy tortilla on top of the sauce layer.
Repeat the layers: remaining refried beans, remaining ground beef, and remaining enchilada sauce.
Top the entire pizza with the shredded cheese blend.
Bake at 400 degrees Fahrenheit for 8 to 10 minutes, or until the cheese is fully melted and bubbly.
Remove from the oven. If using, sprinkle with sliced black olives and diced tomatoes. Cut into wedges and serve immediately.
Notes
For extra crispiness, you can bake the tortillas for 5 minutes before adding toppings.
Use store-bought seasoned ground beef for a faster preparation time.
If you prefer a spicier flavor, add a dash of hot sauce to the simmering beef mixture.
