Ingredients
Scale
1 pound firm cheese (Cheddar, Monterey Jack, or Havarti), cut into 1-inch cubes
1 cup good quality olive oil
4 cloves garlic, thinly sliced
2 sprigs fresh rosemary
4 sprigs fresh thyme
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
1/2 teaspoon black peppercorns
1/4 cup fresh parsley, chopped
Instructions
Cut the cheese into uniform 1-inch cubes. Place the cubes into a clean, airtight glass jar or container.
In a small bowl, combine the olive oil, sliced garlic, rosemary sprigs, thyme sprigs, dried oregano, and red pepper flakes. Let this mixture sit for 10 minutes to allow the flavors to meld slightly.
Pour the seasoned olive oil mixture over the cheese cubes, making sure the cheese is fully submerged.
Sprinkle the chopped parsley and black peppercorns over the top.
Seal the container tightly and refrigerate for at least 24 hours before serving. For best flavor, marinate for 2 to 3 days.
When ready to serve, let the cheese sit at room temperature for 15 minutes before presenting.
Notes
Use firm cheeses that hold their shape well during marination. Soft cheeses may break down.
If you prefer a milder garlic flavor, briefly blanch the garlic slices before adding them to the oil.
Drain off some of the excess oil before serving if you are placing the cheese on a platter.
Reserve the leftover herb oil; it makes an excellent dressing for salads or bread dipping.
