Prepare this easy, make-ahead appetizer featuring cubes of cheese marinated in oil, garlic, and fresh herbs. It is perfect for parties or gatherings.

Ingredients

Scale
  • 8 oz cream cheese, cut into 1-inch cubes
  • 8 oz sharp cheddar cheese, cut into 1-inch cubes
  • 1 cup olive oil
  • 4 cloves garlic, thinly sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped

Instructions

  1. Place the cream cheese and cheddar cubes into a clean, airtight container.
  2. In a small bowl, combine the olive oil, sliced garlic, dried oregano, dried thyme, and red pepper flakes. Whisk briefly.
  3. Pour the oil mixture over the cheese cubes, ensuring all pieces are submerged.
  4. Stir in the chopped fresh parsley and chives.
  5. Seal the container and refrigerate for at least 24 hours, or up to 3 days, to allow the cheese to absorb the marinade flavors.
  6. When ready to serve, let the cheese sit at room temperature for 15 minutes before serving with crackers or toothpicks.

Notes

  • Use high-quality olive oil for the best flavor in the marinade.
  • You can substitute the cheddar with Monterey Jack or Colby cheese if desired.
  • Drain some of the excess oil before serving if you prefer a less oily texture.
