Ingredients
Scale
2 lbs boneless, skinless chicken breasts or thighs
1 cup chicken broth
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup your favorite BBQ sauce (divided)
1 tablespoon apple cider vinegar
Instructions
Place the chicken breasts or thighs into the inner pot of the Instant Pot.
Pour the chicken broth over the chicken.
In a small bowl, mix the smoked paprika, garlic powder, onion powder, salt, and pepper. Sprinkle this seasoning mix evenly over the chicken.
Secure the lid on the Instant Pot and set the valve to sealing.
Cook on High Pressure (Manual/Pressure Cook) for 10 minutes.
When the cooking cycle finishes, allow a Natural Pressure Release (NPR) for 5 minutes, then carefully move the valve to venting to release any remaining pressure.
Remove the chicken from the pot and place it in a large bowl. Shred the chicken using two forks.
Stir 3/4 cup of the BBQ sauce and the apple cider vinegar into the shredded chicken until it is well coated.
