Make rich, fudgy brownies infused with hot cocoa flavor, topped with a homemade marshmallow swirl and toasted finish.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup instant hot chocolate mix (powdered)
  • 1 cup mini marshmallows (for batter)
  • 1 cup mini marshmallows (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides. Lightly grease the paper.
  2. In a large bowl, whisk the melted butter and sugar together until combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, flour, salt, baking powder, and instant hot chocolate mix.
  5. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
  6. Fold in the 1 cup of mini marshmallows designated for the batter.
  7. Spread the batter evenly into the prepared baking pan.
  8. Sprinkle the remaining 1 cup of mini marshmallows evenly over the top of the batter.
  9. Bake for 25 to 30 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
  10. Remove the pan from the oven. Immediately place the pan under a broiler for 30 to 60 seconds, watching constantly, until the top marshmallows are lightly toasted.
  11. Let the brownies cool completely in the pan before lifting out by the parchment paper overhang and cutting into squares.

Notes

  • For extra fudginess, slightly underbake the brownies by about 2 minutes.
  • Use a high-quality cocoa powder for the best chocolate flavor.
  • If you do not have instant hot chocolate mix, substitute with an extra 1/4 cup of cocoa powder and 2 tablespoons of powdered sugar.
