Ingredients
Scale
1.5 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 cup white rice (Jasmine or Basmati)
1 cup water or broth (for rice)
1 tablespoon vegetable oil
4 cloves garlic, minced
1/4 cup honey
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 teaspoon ground ginger
1/2 teaspoon black pepper
1 head broccoli, cut into florets
2 tablespoons water (for steaming broccoli)
Optional garnish: Sesame seeds, sliced green onions
Instructions
Cook the rice according to package directions using 1 cup of water or broth. Keep warm.
In a medium bowl, whisk together the honey, soy sauce, rice vinegar, ginger, and black pepper to create the sauce. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 5 to 7 minutes.
Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Do not let the garlic burn.
Pour the prepared sauce over the chicken. Bring the mixture to a simmer and cook, stirring often, for 2 to 3 minutes until the sauce thickens and coats the chicken pieces well.
While the chicken simmers, steam the broccoli florets. Place broccoli in a microwave-safe bowl with 2 tablespoons of water, cover, and microwave for 3 to 4 minutes until tender-crisp. Alternatively, steam on the stovetop.
Assemble the bowls: Divide the cooked rice among serving bowls. Top with the honey soy garlic chicken and the steamed broccoli.
Garnish with sesame seeds and green onions, if desired. Serve immediately.
Notes
For extra flavor, marinate the chicken pieces in half of the sauce mixture for 15 minutes before cooking.
If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir this slurry into the simmering sauce during step 5.
You can substitute bok choy or snap peas for the broccoli.
