Prepare a satisfying chicken bowl featuring tender chicken glazed with homemade honey mustard sauce, served over fluffy rice with roasted broccoli.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup uncooked white rice
  • 2 cups water or chicken broth
  • 1 head broccoli, cut into florets
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • For the Sauce:
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Instructions

  1. Cook the rice: Combine rice and water or broth in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until liquid is absorbed. Fluff with a fork.
  2. Roast the broccoli: Preheat your oven to 400°F (200°C). Toss broccoli florets with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 15 minutes.
  3. Prepare the sauce: In a small bowl, whisk together Dijon mustard, honey, apple cider vinegar, 1 tablespoon olive oil, garlic powder, and smoked paprika until smooth.
  4. Cook the chicken: Heat a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 6-8 minutes.
  5. Glaze the chicken: Reduce the heat to medium-low. Pour the prepared honey mustard sauce over the cooked chicken. Stir gently to coat all pieces evenly. Simmer for 1-2 minutes until the sauce thickens slightly.
  6. Assemble the bowls: Divide the cooked rice among serving bowls. Top with the glazed honey mustard chicken and the roasted broccoli. Serve immediately.

Notes

  • For meal prep, store the rice, chicken, and broccoli separately to maintain texture. Reheat components before assembling.
  • You can substitute brown rice or quinoa for white rice. Adjust cooking time for the grain accordingly.
  • If you prefer a spicier sauce, add a pinch of cayenne pepper to the sauce mixture.
