Ingredients
Scale
1 pound salmon fillet
1/4 cup teriyaki sauce
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon grated fresh ginger
1 clove garlic, minced
1 tablespoon olive oil
4 cups cooked rice
2 cups broccoli florets, blanched
1 cup shredded carrots
1/2 cup sliced red bell pepper
Sesame seeds for garnish
Instructions
In a small bowl, whisk together teriyaki sauce, soy sauce, honey, ginger, and garlic.
Place salmon fillet in a shallow dish and pour half of the teriyaki mixture over it. Let marinate for at least 15 minutes.
Preheat your grill to medium-high heat.
Lightly oil the grill grates.
Remove salmon from marinade and grill for 4-6 minutes per side, or until cooked through and flakes easily with a fork.
While the salmon is grilling, heat the remaining teriyaki mixture in a small saucepan over medium heat until slightly thickened.
Divide cooked rice among four bowls.
Top each bowl with grilled salmon, blanched broccoli, shredded carrots, and sliced red bell pepper.
Drizzle with the thickened teriyaki sauce and sprinkle with sesame seeds.
Notes
You can substitute other vegetables like snap peas or edamame.
For a spicier kick, add a pinch of red pepper flakes to the marinade.
Ensure salmon is cooked to your desired doneness.
