Ingredients
Scale
1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
1/4 cup olive oil
1/4 cup fresh lemon juice
2 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Lemon wedges, for serving
Optional: Red onion and bell pepper chunks for skewers
Instructions
In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
If using, thread marinated chicken onto skewers, alternating with red onion and bell pepper chunks if desired.
Preheat your grill to medium-high heat.
Grill the skewers for 8-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve immediately with fresh lemon wedges.
Notes
For best flavor, marinate the chicken for at least 30 minutes.
Ensure chicken is cooked to an internal temperature of 165°F (74°C).
You can also bake these skewers in an oven at 400°F (200°C) for about 20-25 minutes, turning halfway through.
Serve with a side of Greek salad or tzatziki sauce.
