Ingredients
Scale
8 slices thick-cut gluten-free bread
4 large eggs
1 cup milk (dairy or non-dairy for DF option)
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 tablespoon sugar
1/4 cup gluten-free rolled oats
1/4 cup gluten-free all-purpose flour blend
1/4 cup packed brown sugar
1/4 cup cold unsalted butter, cubed
1 teaspoon ground cinnamon (for topping)
Cooking spray or butter for the griddle
Instructions
Prepare the Cinnamon Crunch Topping: In a small bowl, combine the oats, gluten-free flour, brown sugar, and 1 teaspoon of cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Place the topping mixture in the refrigerator while you prepare the custard.
Prepare the Custard: In a shallow dish, whisk together the eggs, milk, vanilla extract, 1/2 teaspoon of cinnamon, and 1 tablespoon of sugar until well combined.
Soak the Bread: Dip each slice of gluten-free bread into the custard mixture, allowing it to soak for about 20 to 30 seconds per side. Gluten-free bread often absorbs liquid slower than wheat bread, so take your time to ensure the center is moist.
Cook the French Toast: Heat a large griddle or skillet over medium heat and lightly coat it with cooking spray or butter. Place the soaked bread slices on the hot griddle. Cook for 3 to 4 minutes per side until golden brown.
Apply the Crunch Topping: Immediately after flipping the french toast to the second side, sprinkle a generous layer of the chilled cinnamon crunch topping onto the cooked side. Gently press the topping down so it adheres to the bread.
Finish Cooking: Continue cooking until the second side is golden brown and the topping is lightly toasted and crisp. You may need to reduce the heat slightly to prevent the topping from burning before the center is heated through.
Serve immediately with maple syrup or fresh fruit.
Notes
Use thick-cut gluten-free bread for the best texture; thin slices may become soggy.
For a dairy-free version, substitute regular milk with almond or oat milk and use a dairy-free butter substitute for the topping.
If you prefer a softer topping, sprinkle it on during the last minute of cooking instead of the beginning of the second side.
