Ingredients

Scale
  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved or quartered
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Toss potatoes with olive oil, rosemary, thyme, salt, and pepper.
  2. Place potatoes in a large oven-safe skillet and roast in a preheated oven at 400°F (200°C) for 20-25 minutes, or until tender.
  3. While potatoes roast, season steak bites generously with salt and pepper.
  4. Melt butter in a separate skillet over medium-high heat.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Add steak bites to the skillet and sear for 1-2 minutes per side until browned. Do not overcrowd the pan; cook in batches if necessary.
  7. Once potatoes are tender, remove them from the oven.
  8. Add the seared steak bites to the skillet with the potatoes.
  9. Stir to combine and coat everything in the garlic butter.
  10. Garnish with fresh parsley before serving.

Notes

  • Adjust cooking time for steak bites based on your preferred doneness.
  • Feel free to add other vegetables like bell peppers or onions.
