Ingredients
Scale
1.5 lb sirloin or ribeye steak, cut into 1-inch cubes
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Pat the steak cubes dry with paper towels. Season them evenly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Add the steak cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan. Work in batches if necessary.
Sear the steak for 1 to 2 minutes per side until a brown crust forms. For medium-rare (juicy center), aim for an internal temperature of 130°F.
Remove the seared steak from the skillet and set it aside on a clean plate.
Reduce the heat to medium-low. Add the butter to the same skillet.
Once the butter melts, add the minced garlic and thyme. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
Return the steak bites to the skillet. Toss them quickly in the garlic butter sauce for about 30 seconds to coat. Do not cook further.
Remove the skillet from the heat immediately.
Garnish with fresh parsley before serving.
Notes
For the juiciest results, use a meat thermometer to check the internal temperature. Remove the steak when it is 5 degrees below your target temperature, as it will continue to cook off the heat.
Use high-heat cooking oil like avocado or refined olive oil for the initial sear.
If you prefer an air fryer method, cook the seasoned steak cubes at 400°F for 6 to 8 minutes, shaking halfway, then toss with the prepared garlic butter sauce.
