Ingredients
Scale
1 lb large shrimp, peeled and deveined
4 tablespoons unsalted butter
6 cloves garlic, minced, divided
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked white rice (for one serving)
1 tablespoon fresh parsley, chopped (for garnish)
For the Garlic Sauce:
4 tablespoons mayonnaise
2 tablespoons olive oil
3 cloves garlic, finely minced or grated
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Pinch of salt and pepper
Instructions
Prepare the Garlic Sauce: In a small bowl, combine the mayonnaise, olive oil, 3 cloves of minced garlic, lemon juice, Dijon mustard, salt, and pepper. Whisk until smooth. Set aside.
Cook the Rice: Prepare 1 cup of white rice according to package directions. Keep warm.
Cook the Shrimp: Melt 3 tablespoons of butter in a large skillet over medium heat. Add 4 cloves of minced garlic and cook for 30 seconds until fragrant.
Add the shrimp, salt, and pepper to the skillet. Cook for 2-3 minutes per side until pink and cooked through.
Remove the shrimp from the skillet and set aside.
Make the Garlic Butter Finish: Add the remaining 1 tablespoon of butter and the last 2 cloves of minced garlic to the same skillet. Cook for 30 seconds. Do not let the garlic burn.
Return the cooked shrimp to the skillet and toss quickly to coat in the fresh garlic butter. Remove from heat.
Assemble the Bowl: Place the cooked rice in a serving bowl. Top the rice with the garlic butter shrimp.
Drizzle a generous amount of the prepared concentrated Garlic Sauce over the shrimp and rice.
Garnish with chopped fresh parsley before serving.
Notes
For meal prep, store the shrimp, rice, and garlic sauce separately. Assemble just before eating.
Use sushi rice or jasmine rice for the best texture in the bowl.
If you prefer a thinner sauce, add a teaspoon of water to the prepared garlic sauce.
