Ingredients
Scale
4 (6 ounce) salmon fillets, skin on or off
4 tablespoons unsalted butter, softened
4 cloves garlic, minced
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
For the Sauce:
4 tablespoons unsalted butter
2 cloves garlic, minced
1/4 cup fresh lemon juice
2 tablespoons fresh parsley, chopped
Pinch of salt and pepper
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, mix the 4 tablespoons of softened butter, 4 minced garlic cloves, 1 teaspoon dried parsley, salt, and pepper to create the garlic butter mixture.
Pat the salmon fillets dry with paper towels. Place them on the prepared baking sheet.
Spread or rub the garlic butter mixture evenly over the top of each salmon fillet.
Bake for 12 to 15 minutes, or until the salmon flakes easily with a fork.
While the salmon bakes, prepare the sauce. In a small saucepan over medium heat, melt the 4 tablespoons of butter.
Add the 2 minced garlic cloves to the saucepan and cook for about 1 minute until fragrant. Do not let the garlic brown.
Remove the pan from the heat. Stir in the fresh lemon juice and 2 tablespoons of chopped fresh parsley. Season with a pinch of salt and pepper.
Once the salmon is cooked, transfer the fillets to serving plates. Spoon the warm lemon garlic sauce generously over each fillet before serving.
Notes
For a pan-seared finish, cook the salmon skin-side down in olive oil for 4 minutes, then flip and baste with the garlic butter mixture until cooked through.
You can substitute dried parsley with fresh if you prefer.
Serve this salmon with roasted asparagus or a simple rice pilaf.
