Ingredients
Scale
1 cup whole milk
1 cup heavy cream
4 ounces high-quality dark chocolate (70% cocoa or higher), finely chopped
2 tablespoons granulated sugar (adjust to taste)
1/4 teaspoon vanilla extract
Pinch of salt
Instructions
Combine the whole milk and heavy cream in a medium saucepan over medium heat. Heat until small bubbles form around the edges, but do not let it boil.
Remove the saucepan from the heat. Add the finely chopped dark chocolate to the warm milk mixture. Let it sit undisturbed for one minute to begin melting.
Whisk the mixture slowly until the chocolate is completely melted and the liquid is smooth and uniform.
Return the saucepan to low heat. Whisk in the sugar, vanilla extract, and salt. Continue to heat gently for 2 to 3 minutes, whisking constantly, until the chocolate is hot and slightly thickened. Do not boil.
Pour the hot chocolate into mugs immediately. Serve plain or with a dollop of whipped cream.
Notes
The key difference between this and standard American hot cocoa is the use of solid, high-quality chocolate instead of cocoa powder, resulting in a much thicker texture.
For an even richer drink, substitute 1/4 cup of the milk with strong brewed espresso.
If the chocolate separates or becomes grainy, whisk vigorously off the heat until it comes back together.
