Ingredients
Scale
15 oz whole milk ricotta cheese, drained if watery
2 tablespoons olive oil, plus extra for drizzling
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons hot honey, plus more for drizzling
1 teaspoon fresh thyme leaves
Flaky sea salt, for finishing
Crackers, pita bread, or crudités, for serving
Instructions
Place the drained ricotta cheese, 2 tablespoons of olive oil, lemon juice, salt, and pepper into a food processor or a bowl if using a hand mixer.
Process or whip the mixture until it becomes completely smooth, light, and fluffy, about 1 to 2 minutes. Scrape down the sides as needed.
Transfer the whipped ricotta to a shallow serving bowl. Use the back of a spoon to create a slight well or swirl pattern on the surface.
Drizzle the top generously with the 2 tablespoons of hot honey and a small amount of additional olive oil.
Sprinkle the fresh thyme leaves and a pinch of flaky sea salt over the top.
Serve immediately with your choice of crackers or vegetables.
Notes
If you do not have a food processor, use a stand mixer with the whisk attachment or a hand mixer. Whip for 3 to 4 minutes until very smooth.
Drain the ricotta for at least 30 minutes in a fine-mesh sieve lined with cheesecloth if it seems very wet. This prevents a watery dip.
For a savory variation, substitute the hot honey with 1 tablespoon of finely minced roasted garlic and a drizzle of regular honey.
