Ingredients
Scale
8 ounces rotini or penne pasta
5 ounces fresh baby spinach
1 pint fresh strawberries, hulled and sliced
4 ounces feta cheese, crumbled
1/4 cup olive oil
3 tablespoons fresh lemon juice
1 tablespoon honey
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Cook the pasta according to package directions until al dente. Drain the pasta and rinse immediately with cold water to stop cooking. Set aside to cool completely.
While the pasta cools, prepare the dressing. In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
In a large bowl, combine the cooled pasta, fresh spinach, sliced strawberries, and crumbled feta cheese.
Pour the dressing over the pasta mixture. Toss gently until all ingredients are evenly coated.
Serve immediately, or cover and chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
Notes
You can prepare the dressing up to two days ahead and store it in the refrigerator.
If making ahead, add the spinach just before serving to keep it crisp.
For extra crunch, add 1/4 cup of toasted pecans or slivered almonds.
