Make these simple pizza muffins for a fun, kid-friendly pizza snack. They are great for parties or packing in lunchboxes.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg, lightly beaten
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni slices
  • 1/2 cup pizza sauce

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a standard 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
  3. In a separate medium bowl, mix the milk, vegetable oil, and egg.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix; a few lumps are fine.
  5. Gently fold in the mozzarella cheese and pepperoni slices.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Top each muffin with about one teaspoon of pizza sauce. You can gently swirl it in with a toothpick if you like.
  8. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the pizza muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These mini pizza muffins freeze well. Cool them completely, place them in a freezer-safe bag, and freeze for up to three months. Reheat in the microwave or toaster oven.
  • For a different flavor, substitute the pepperoni with cooked, crumbled sausage or finely chopped bell peppers.
  • If you want extra cheesy pizza cupcakes, sprinkle a little extra mozzarella on top before baking.
