Make this creamy, hearty soup that tastes just like a classic cheeseburger, complete with ground beef and potatoes, ready in under an hour.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 8 ounces sharp cheddar cheese, shredded
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup sour cream (optional, for extra richness)

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the beef broth. Add the diced potatoes, Italian seasoning, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
  4. In a small bowl, whisk the flour into the milk until smooth. Slowly pour this mixture into the simmering soup, stirring constantly to prevent lumps. Cook until the soup thickens slightly, about 5 minutes.
  5. Reduce the heat to low. Gradually stir in the shredded cheddar and Monterey Jack cheeses until completely melted and the soup is smooth and creamy. Do not let the soup boil after adding the cheese.
  6. Stir in the sour cream, if using. Taste and adjust seasonings as needed before serving hot.

Notes

  • For a bacon cheeseburger flavor, cook 4 slices of crumbled bacon with the ground beef and reserve some bacon bits for topping.
  • If you prefer a thicker soup, use only 3 cups of broth initially.
  • Serve with your favorite burger toppings like chopped pickles or diced tomatoes on the side.
