Prepare tender, flavorful chicken fajitas with minimal effort using your slow cooker. This hands-off recipe is perfect for busy weeknights.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 (10 oz) can diced tomatoes and green chilies, undrained
  • 1/2 cup chicken broth
  • 2 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the sliced onion and peppers in the bottom of your slow cooker.
  2. Place the chicken breasts over the vegetables.
  3. In a small bowl, mix together the chili powder, cumin, oregano, garlic powder, salt, and pepper.
  4. Sprinkle the seasoning mix evenly over the chicken.
  5. Pour the diced tomatoes and green chilies, chicken broth, and lime juice over everything.
  6. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is fully cooked and tender.
  7. Remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker and stir to coat with the juices.
  8. Serve hot with warm tortillas and your favorite toppings.

Notes

  • For best results, shred the chicken directly in the slow cooker juices.
  • If you prefer thicker strips instead of shredded chicken, slice the cooked chicken against the grain instead of shredding.
  • This recipe freezes well for future meal prep.
