Ingredients
Scale
2 lbs chicken drumsticks, bone-in, skin-on
1 tablespoon baking powder (aluminum-free)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup honey
1/4 cup soy sauce
4 cloves garlic, minced
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1 teaspoon cornstarch
2 tablespoons water
Instructions
Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with foil and place a wire rack on top of the foil.
Pat the chicken drumsticks completely dry using paper towels. This step is crucial for crispiness.
In a medium bowl, combine the baking powder, salt, and pepper. Toss the dry drumsticks in this mixture until they are evenly coated.
Place the coated drumsticks on the wire rack, ensuring there is space between each piece.
Bake for 25 minutes at 425 degrees Fahrenheit.
While the chicken bakes, prepare the glaze. In a small saucepan, combine the honey, soy sauce, minced garlic, rice vinegar, and ginger. Bring the mixture to a simmer over medium heat.
In a separate small bowl, whisk together the cornstarch and water to create a slurry. Pour the slurry into the simmering sauce and whisk constantly until the sauce thickens, about 1 minute. Remove from heat.
After the initial 25 minutes of baking, remove the chicken from the oven. Brush half of the honey garlic glaze over all sides of the drumsticks.
Return the chicken to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit and the skin is deeply browned and crisp.
Remove the chicken from the oven. Brush the remaining glaze over the hot drumsticks before serving.
Notes
For extra crispiness, you can briefly place the drumsticks under the broiler for the last 1-2 minutes, watching closely to prevent burning.
If you prefer a thinner glaze, reduce the amount of cornstarch used in the slurry to 1/2 teaspoon.
Use fresh garlic for the best flavor in the sauce.
