A detailed recipe for making moist, tender chicken nuggets with an extremely crispy coating, including instructions for deep frying, oven baking, and air frying, paired with a simple honey dipping sauce.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1.5 cups Panko breadcrumbs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • Vegetable oil, for frying (if deep frying)
  • For the Honey Dip:
  • 0.5 cup honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon hot sauce (optional)

Instructions

  1. Prepare the chicken: Pat the chicken pieces dry with paper towels. This step helps the coating adhere.
  2. Set up the breading station: Place flour in one shallow dish. Whisk eggs in a second dish. Mix Panko breadcrumbs, salt, pepper, garlic powder, and paprika in a third dish.
  3. Coat the chicken: Dredge each chicken piece first in the flour, shaking off excess. Dip into the egg mixture, allowing excess to drip off. Finally, press firmly into the Panko mixture to coat completely. For extra crispness, repeat the egg and Panko dip (double-dredge).
  4. Chill the nuggets: Place the coated nuggets on a wire rack set over a baking sheet. Refrigerate for at least 30 minutes. This prevents the coating from falling off during cooking.
  5. Cook the nuggets (Choose one method):
  6. Deep Fry: Heat 2 inches of oil in a heavy-bottomed pot to 350°F (175°C). Fry nuggets in batches for 3-4 minutes, turning occasionally, until golden brown and cooked through (internal temperature 165°F or 74°C). Drain on a wire rack.
  7. Air Fry: Preheat air fryer to 380°F (195°C). Lightly spray the nuggets with cooking spray. Cook for 10-12 minutes, flipping halfway through, until golden and crisp.
  8. Oven Bake: Preheat oven to 425°F (220°C). Place nuggets on a lightly oiled wire rack set over a baking sheet. Bake for 15-20 minutes, flipping halfway, until internal temperature reaches 165°F (74°C).
  9. Make the Honey Dip: Whisk together honey, Dijon mustard, apple cider vinegar, and hot sauce (if using) in a small bowl until smooth.
  10. Serve the crispy chicken nuggets immediately with the homemade honey dip.

Notes

  • For the juiciest interior, do not overcook the chicken. Use a meat thermometer to check for 165°F.
  • Using Panko breadcrumbs provides superior crunch compared to standard breadcrumbs.
  • If you prefer a honey mustard dip, increase the Dijon mustard to 3 tablespoons.
