Ingredients
Scale
2 lbs chicken wings (flats and drumettes separated)
Preheat your oven to 425°F (220°C). Line a large baking sheet with foil for easy cleanup, then place a wire cooling rack on top of the foil.
Pat the chicken wings completely dry using paper towels. This step is crucial for crispiness.
In a medium bowl, combine the baking powder, salt, pepper, garlic powder, and cayenne pepper.
Add the dried chicken wings to the bowl. Toss thoroughly until every piece is lightly and evenly coated with the baking powder mixture.
Arrange the coated wings in a single layer on the wire rack. Do not let the wings touch each other; space them out for even air circulation.
Bake for 20 minutes at 425°F (220°C).
Flip the wings over. Reduce the oven temperature to 400°F (200°C) and bake for another 20 to 25 minutes, or until the skin is deeply golden brown and extremely crispy.
Remove the wings from the oven. Toss immediately with your preferred sauce or serve with the dry rub remaining.
Notes
Use a wire rack to allow air to circulate completely around the wings, which prevents the bottom from steaming.
Baking powder raises the pH level of the chicken skin, helping it brown faster and dry out for maximum crunch. Do not substitute with baking soda.
If you prefer a sauce, toss the hot wings in the sauce right before serving to maintain the crisp texture.
