Make a rich, creamy mushroom Alfredo chicken dinner using just one skillet for fast preparation and easy cleanup. This recipe is perfect for a weeknight meal.

Ingredients

Scale
  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 8 oz sliced cremini mushrooms
  • 3 cloves garlic, minced
  • 1.5 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese, plus extra for serving
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried Italian seasoning
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
  4. Add the sliced mushrooms to the same skillet. Cook until they release their moisture and start to brown, about 5 minutes.
  5. Add the minced garlic to the mushrooms and cook for 1 minute until fragrant.
  6. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer, scraping up any browned bits from the bottom of the pan.
  7. Reduce the heat to low. Stir in the grated Parmesan cheese and Italian seasoning until the sauce is smooth. Do not let the sauce boil once the cheese is added.
  8. Return the cooked chicken to the skillet. Stir to coat the chicken in the sauce. Cook for 2-3 minutes until the chicken is heated through.
  9. Taste and adjust seasoning if needed. Garnish with fresh parsley and serve immediately.

Notes

  • For a thicker sauce, simmer the sauce slightly longer before adding the chicken back in.
  • You can substitute cremini mushrooms with white button or shiitake mushrooms.
  • If you prefer a lower-fat option, substitute half the heavy cream with half-and-half, but the sauce will be less rich.
  • Serve this skillet meal over cooked fettuccine, zucchini noodles, or alongside steamed broccoli.
