Make this rich and flavorful Creamy Cajun Chicken Skillet for a satisfying weeknight dinner. This one-pan meal features tender chicken coated in a smooth, spicy cream sauce.

Ingredients

Scale
  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces evenly with salt, pepper, and Cajun seasoning.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let the broth simmer for 2 minutes.
  5. Stir in the heavy cream and bring the mixture to a gentle simmer. Cook until the sauce slightly thickens, about 3 minutes.
  6. Reduce heat to low. Stir in the Parmesan cheese until the sauce is smooth. Add the chopped sun-dried tomatoes.
  7. Return the cooked chicken to the skillet. Stir in the fresh spinach until it wilts into the sauce.
  8. Taste the sauce and adjust seasoning if needed. Serve immediately.

Notes

  • For a thicker sauce, simmer the cream mixture for an extra 2 minutes before adding the cheese.
  • If you prefer less spice, reduce the amount of Cajun seasoning used on the chicken.
  • This dish pairs well served over rice or pasta.
