Ingredients
Scale
1 pound fettuccine pasta
1 pound large shrimp, peeled and deveined
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 cup dry white wine or chicken broth
1 1/2 cups heavy cream
1 cup freshly grated Parmesan cheese, plus more for serving
Cook the fettuccine according to package directions until al dente. Reserve 1 cup of the starchy pasta water before draining. Set the pasta aside.
Season the shrimp lightly with salt and pepper.
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside.
Add the remaining 2 tablespoons of butter to the same skillet. Add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic brown.
Pour in the white wine or broth and let it simmer, scraping up any browned bits from the bottom of the pan, until the liquid reduces by half (about 2 minutes).
Reduce the heat to low. Slowly whisk in the heavy cream. Let the sauce warm through but do not let it boil rapidly.
Remove the skillet from the heat. Gradually stir in the grated Parmesan cheese, whisking constantly until the cheese melts and the sauce thickens. Stir in the nutmeg.
If the sauce seems too thick, whisk in a few tablespoons of the reserved pasta water until you reach your desired consistency. Taste and adjust seasoning with salt and pepper.
Return the cooked shrimp to the skillet. Add the drained pasta and toss everything gently to coat evenly with the sauce.
Serve immediately, garnished with fresh parsley and extra Parmesan cheese.
Notes
For a thicker sauce, use half-and-half instead of heavy cream, but add 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water to the cream mixture before adding the cheese.
