You need a fast, single-serve dessert? Leo whipped up this Cottage Cheese Microwave Brownie. It is packed with protein and ready in minutes. This is the perfect healthy microwave snack when you crave something sweet.

Ingredients

Scale
  • 1/4 cup low-fat cottage cheese
  • 1 large egg
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon sweetener (like erythritol or monk fruit)
  • 1 teaspoon melted coconut oil or butter
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon almond flour
  • 1/4 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Combine the cottage cheese and egg in a microwave-safe mug. Blend or whisk until completely smooth. You want no lumps remaining.
  2. Add the cocoa powder, sweetener, melted coconut oil, and vanilla extract to the mug. Mix well until just combined.
  3. Stir in the almond flour, baking powder, and salt. Mix until the batter is uniform. Do not overmix.
  4. Place the mug in the microwave. Cook on high power for 60 to 90 seconds. Cooking time varies by microwave wattage; start with 60 seconds.
  5. Check the center; it should look mostly set but still slightly fudgy. If it is still wet, microwave in 10-second bursts until done.
  6. Let the brownie cool in the mug for a minute before eating. Enjoy your protein packed dessert!

Notes

  • For a richer chocolate flavor, add 1/2 teaspoon of instant coffee powder to the dry ingredients.
  • If you prefer a fudgier texture, slightly undercook the brownie. It will firm up as it cools.
  • You can substitute the almond flour with oat flour if you are not aiming for a low-carb brownie microwave recipe.
