Make these easy, crustless quiche cups using cottage cheese for a high-protein, Starbucks egg bites copycat recipe perfect for meal prep.

Ingredients

Scale
  • 1 cup cottage cheese
  • 6 large eggs
  • 1/4 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked mix-ins (e.g., chopped ham, spinach, cooked bacon bits)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or use silicone liners.
  2. In a blender or food processor, combine the cottage cheese, eggs, and milk. Blend until the mixture is completely smooth and creamy. This step is key for a smooth texture, similar to the Starbucks egg bites.
  3. Stir in the salt, pepper, shredded cheese, and your chosen cooked mix-ins into the egg mixture.
  4. Pour the batter evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 18 to 22 minutes, or until the egg cups are set and a toothpick inserted near the center comes out clean.
  6. Remove the cups from the oven and let them cool in the tin for 5 minutes before carefully removing them.
  7. For best results and texture, cool completely before storing. These are excellent for meal prep egg cups.

Notes

  • For a texture closer to sous-vide, you can bake these in a water bath (bain-marie) by placing the muffin tin inside a larger baking dish and filling the dish halfway with hot water before baking.
  • These protein egg cups freeze well. Cool them completely, then store them in an airtight container in the freezer for up to one month. Reheat in the microwave.
  • If you prefer a crustless quiche cups texture, blending the cottage cheese until totally smooth is essential.
