Ingredients
Scale
1 (12.4 ounce) can refrigerated jumbo cinnamon rolls
4 large eggs
1 cup milk
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 cup granulated sugar
1/4 cup packed brown sugar
1/4 cup (1/2 stick) unsalted butter, melted
1/2 cup powdered sugar (for icing)
1 tablespoon milk (for icing)
Instructions
Grease an 8×8 inch baking dish.
Open the can of cinnamon rolls and separate the rolls. Cut each roll into quarters.
Arrange the cut cinnamon roll pieces evenly in the prepared baking dish.
In a medium bowl, whisk together the eggs, 1 cup milk, vanilla extract, and 1/4 teaspoon ground cinnamon until well combined.
Pour the egg mixture evenly over the cinnamon roll pieces in the dish.
In a small bowl, mix the granulated sugar and brown sugar together. Sprinkle this mixture over the top of the rolls.
Drizzle the melted butter evenly over the sugar mixture.
Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
When ready to bake, preheat your oven to 350 degrees F. Remove the plastic wrap.
Bake for 30 to 35 minutes, or until the casserole is set and lightly golden brown.
While the casserole cools slightly, prepare the icing by whisking the powdered sugar and 1 tablespoon of milk until smooth.
Drizzle the prepared icing over the warm casserole before serving.
Notes
For a crockpot cinnamon rolls version, place the assembled, uncooked casserole into a slow cooker. Cook on low for 3 to 4 hours.
If you want a richer custard, substitute heavy cream for half of the milk.
This recipe works well as a 5 ingredient cinnamon casserole if you skip making the homemade icing and just use the icing packets that come with the rolls.
