Make soft, chewy double chocolate cookies flavored with mint and topped with crushed candy canes for a festive holiday treat.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup peppermint extract
  • 1 cup powdered sugar (for rolling)
  • 1/2 cup crushed candy canes (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract and peppermint extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the semi-sweet chocolate chips.
  7. Place the powdered sugar in a shallow dish. Roll rounded tablespoons of dough into balls, then roll each ball thoroughly in the powdered sugar.
  8. Place the sugared dough balls about 2 inches apart on the prepared baking sheets.
  9. Bake for 10 to 12 minutes. The edges should be set, but the centers should still look slightly soft for a chewy texture.
  10. Immediately after removing the cookies from the oven, gently press a few crushed candy canes onto the top of each warm cookie.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a stronger peppermint flavor, you can add 1/4 teaspoon of pure peppermint oil along with the extract, but taste the dough first.
  • If you prefer a crinkle effect, roll the dough balls in powdered sugar twice before baking.
  • Store cooled cookies in an airtight container at room temperature for up to 5 days.
