Ingredients

Scale
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 8 ounces dried egg noodles
  • 2 tablespoons soy sauce (for marinating chicken)
  • 1 tablespoon cornstarch (for marinating chicken)
  • 2 tablespoons vegetable oil, divided
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup shredded cabbage
  • 1 cup sliced carrots
  • 1 cup sliced celery or broccoli florets
  • 1/2 cup bean sprouts (optional)
  • For the Savory Sauce:
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons oyster sauce (or vegetarian mushroom sauce)
  • 1 tablespoon dark soy sauce (for color)
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon ground ginger
  • 1/4 cup chicken broth
  • 1 teaspoon cornstarch (for sauce thickening)

Instructions

  1. Combine the chicken pieces with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Set aside to marinate for at least 10 minutes.
  2. Cook the egg noodles according to package directions until tender but still slightly firm (al dente). Drain them well and toss with a small amount of oil to prevent sticking.
  3. In a small bowl, whisk together all the sauce ingredients: 1/4 cup soy sauce, oyster sauce, dark soy sauce, sesame oil, sugar, ginger, chicken broth, and 1 teaspoon of cornstarch. Set the best chow mein sauce aside.
  4. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir fry until it is cooked through and lightly browned, about 4 to 5 minutes. Remove the chicken from the wok and set it aside.
  5. Add the remaining 1 tablespoon of oil to the wok. Add the sliced onion and cook for 1 minute until slightly softened.
  6. Add the garlic, carrots, and cabbage (and celery/broccoli if using). Stir fry for 3 to 4 minutes until the vegetables are crisp-tender.
  7. Return the cooked chicken to the wok. Pour the prepared savory asian noodles recipe sauce over the chicken and vegetables. Stir constantly until the sauce thickens and coats everything evenly, about 1 to 2 minutes.
  8. Add the cooked noodles and bean sprouts (if using) to the wok. Toss everything together quickly until the noodles are fully incorporated and heated through.
  9. Serve your homemade chicken chow mein immediately. This quick stir fry chicken noodles dish is best eaten fresh.

Notes

  • For the best texture, cook the chicken and vegetables in batches if your wok is small. This prevents steaming and helps you achieve that takeout style chow mein crispness.
  • If you want a slightly crispier noodle, you can briefly pan-fry the cooked noodles in a separate pan with a little oil before adding them back to the main stir fry.
  • This recipe is a great healthy chow mein alternative; feel free to substitute chicken with shrimp or tofu for variety.
