Prepare this simple, cheesy chicken tortilla bake for a quick and satisfying weeknight meal. This one-dish casserole uses shredded chicken and layers of tortillas baked until golden and gooey.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 1 (10.5 ounce) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup water or milk
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1 cup salsa, mild or medium
  • 8 small (8-inch) flour tortillas, cut into quarters
  • 2 cups shredded Monterey Jack or Mexican blend cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, water or milk, chili powder, cumin, and salt. Mix well until everything is evenly coated.
  3. Spread half of the chicken mixture evenly over the bottom of the prepared baking dish.
  4. Arrange half of the cut tortillas over the chicken mixture.
  5. Spoon half of the salsa over the tortillas. Sprinkle with half of the Monterey Jack cheese blend.
  6. Repeat the layers: remaining chicken mixture, remaining tortillas, remaining salsa, and the remaining Monterey Jack cheese blend.
  7. Top the entire bake with the 1 cup of shredded cheddar cheese.
  8. Bake for 25 to 30 minutes, or until the cheese is melted, bubbly, and lightly browned on top.
  9. Let the bake rest for 5 minutes before cutting and serving.
